Chow Down to Eurovision 2015 - Norway













Good evening from Norway, winners of the first Chow Down to Eurovision in 2013.

Today's recipe is from the land of culinary past that I'm sure we all had in our early youth but it certainly isn't terrible.

It should be enjoyed with some retro Eurovision such as the Bendik Singer from 1973 with It's Just a Game.....I hope they aren't referring to a game of the era where car keys were placed in a bowl?






Smoked Salmon Eggs
Ingredients
  • 6 eggs
  • 150g smoked salmon
  • 50g sour cream
  • 10g capers
  • Juice of 1/2 lemon
Method
  • Boil the eggs till hard boiled (about 7-8 minutes on low simmer)
  • Put eggs in cold water then peel
  • Cut the eggs in half and scoop out and place the yolks in a bowl
  • In a food processors add 100g smoked salmon, sour cream, capers, lemon juice and 1/2 the egg yolks*
  • Blend till smooth
  • Pipe or spoon the mixture into the hollow eggs whites
  • Arrange on a serving plate and decorate with more smoked salmon and a caper
*the rest of the yolks can get mixed with some mayo for toast or a sandwich


Don't worry if they eggs don't come out perfect, I would rather an egg with a bit missing than waste eggs searching for eggcellence. (sorry)

I have read about a method of putting the eggs into boiling water because they are coop fresh collected that day, so will have to give this a try!

One thing is certain Mørland and  Debrah Scarlett did something wonderful in Vienna coming 8th in Vienna with A Monster Like Me.  A class act from Norway that was made even more visually special by the phone torches in the arena.

Their powerful duet had an air of elegance that continued onto the red carpet where they graciously posed for selfies.

Chow Down to Eurovision 2014 - Denmark

God aften this is the host nation of this year's Eurovision Song Contest, Denmark. Last year the Chow Down to Eurovision finished in line with this song contest, but this time I really don't want either to end.

So having seen the contest I'd just like to say to Denmark you did a really, really good show, I even made the claim on Twitter that I think it was the best Eurovision production ever! The postcards, the greenroom surprises, and the genius idea of bringing food and Eurovision together, what a truly brilliant idea...wink wink!

I'd also like to take this opportunity to apologise to the rest of the world for the dreadful display Australia put on in Semi Final 2. The "comical" monstrosity of stereotypical Australian life coming to Europe was a train wreck and not a way of life known to any Aussie I've discussed the act with.

And to think we didn't already have enough to be ashamed about with our refugee policy.

Jessica Mauboy was not at her best on the night but clearly she is an amazing singer who I feel may have been put under immense pressure to do well rather than just told to go out there and sing your heart out girl! (that's how I would have managed her, but I'm not always right, just usually)

Any back to Denmark, just had to get all that off my chest.


Being the host nation I spared no expense and paid for a gravlax masterclass, where the chef was very informative and amusing even though the other participants asked some really stupid questions.

The group was like a casting call for Kath and Kim's Trude and Prue who almost had a heart attack when they realised they didn't have a salmon knife, "oh, the horror", but thankfully Peters of Kensington could relieve their shame for about $300. Oh, greash!

Needless to say I'll scope out my classes better in the future and try to avoid the faux foodies and look for more with people that cook, and with more comfy chairs. Beautiful design but uncomfortable.

Lonnie Devantier presented the high energy Hallo hallo in 1990 placing 8th and I think if I start a regime of Danish jazz cardio their well designed chairs with be comfy in no time!
I made two variety of gravlax beetroot and fennel. It was also at this class that I first heard about Nordic nut bread which is a brilliant accompaniment to the gravlax.


Gravlax (this is a 3 day process)
Ingredients
  • Salmon (with pin bones removed)
  • Sugar
  • Salt
  • Fennel seeds
  • 1 large beetroot
Method
  • This can be done with a whole salmon but I opted for 2 large pieces so I could do different flavours
  • For every 300g of salmon your need 100g salt and 100g sugar (or thereabouts)
  • Mix the sugar and salt together and cover the salmon
  • If using fennel seeds, bash them in a mortar and pestle before adding to the sugar and salt mix
  • Cover with plastic wrap and leave in the fridge for 24 hours
  • Next day turn the fish over and rearrange the salt and sugar mix to cover salmon
  • Cover with plastic wrap and leave in fridge for 24 hours
  • Day 3 remove the salt and sugar and pat the salmon dry
  • If using beetroot, cover salmon flesh side up with grated beetroot and let sit for about 8 hours
  • Remove beetroot and pat fish dry
  • Slice thinly with a knife (I don't have a salmon knife and no one has died so whatever thin knife you have will be fine)
  • The gravlax can be served on Nordic nut bread with shaved fennel and a brown sauce I couldn't catch the Danish name of that is equal parts Dijon mustard and brown sugar, with a splash of olive oil, white wine vinegar and finely diced red onions mixed together.

Ensure you cover the fish, a tray of salt and sugar would make a boring photo.
There is no need to weight it down.

Chow Down to Eurovision 2013 - United Kingdom

Love, shine a light it's time for the United Kingdom to plate up their offering to the Chow Down to Eurovision 2013.
If you have been on this journey with me from Austria or if you followed this blog before the Chow Down, firstly I love you! And secondly you may have noticed I can be a bit odd, some dress it up as quirky but I'm happy with plain old odd.

My good friend and hairdresser tells me I'm simple, but as English is his second language I don't think I should feel hurt, it just means I'm no fuss....I think.

Anyway the point of this story, and yes there is one is to talk about travel souvenirs.
Most people end up with postcards, trinkets, or statues but I seek out recipe books.
I love food magazines but my favourites are the free ones from supermarkets or in newspaper lift out as they are a bit like a time capsule.
Only available for that particular time when I happened to be in a certain place, you can't see them on line or order them from amazon.
Are we still in the territory of quirky odd or have with hit down right weird??

Today's recipe comes from a Waitrose winter cookbook  I picked up the last time I was in London. I think it is a supersized memory trigger for all the senses as not only do you get the enjoyment of imaging cooking and tasting the recipes but you remember back to the place and scene where you found it.

Don't play that Song Again was the UK entry in 2000, a risky title in a song contest and resulted in Nikki French placing 16th which was the UK's worst result till the off key Jemini. (dead last with nul points) Nikki shares a link with this year's contestant Bonnie Tyler as they both had top 5 hits with Total Eclipse of the Heart.

Luxury Salmon and Caper Pie based on Waitrose winter cookbook
Ingredients
  • 500g piece of salmon fillet/s
  • 350ml milk
  • 150g butter
  • 50g plain flour
  • 150ml white wine
  • 110g baby capers
  • 400g green prawns
  • 1kg of potatoes for mash
Method
  • Add potatoes to a boiler of cold water and boil till tender (peeled or unpeeled)
  • In a deep frypan cover the salmon with the milk
  • Simmer on low for 7-10 minutes
  • Remove the fish but reserve the milk
  • In a saucepan melt 50g of butter and add the flour to make a roux
  • Add the wine and the milk and whisk to avoid lumps
  • Continue to heat and whisk the sauce as it thickens about 2-3 minutes
  • Remove from the heat and add the capers and prawns and stir through
  • Break up the salmon and add it too the sauce
  • Mash the potatoes with 100g of butter, a splash of milk and salt to taste
  • Pour sauce into a baking or pie dish and cover with the mash potato
  • You can go fancy old school and pipe it or just spoon it on
  • Bake in a 200°C oven for about half an hour.
  • Doesn't photograph well but is the ultimate in loving comfort food, get me a blankie and a spoon toot sweet!

 
Believe in Me is Bonnie Tyler's plea for Malmö, will she do as well as Nikki or Jemini?
